My vegan lunch, dinner and lunch again…

So these are 3 meals on a road, I cook for 1 person and usually in small portions.

Vegan Lunch

Finally I found some vegan sausages! It is made of soy and wheat. I was too excited about it!

I´m a huge fan of the griller. I grilled zucchini, garlic, vegan sausage and some whole grain bread with hummus and vegan cheese on it.

I added 1 teaspoon of crushed seeds (chia, flax, sesame and sunflower seeds), 1 teaspoon of hemp seeds and 1/2 spoon of smoked mixed nuts. It also has half an avocado.

Dinner

Today I used the griller again, and now it was time for potatoes, onions and tempeh, which is made of Soy. Once the tempeh is grilled, I cut it on slices and let them soak in soy sauce for a couple of minutes.

In Barcelona I only find tempeh in one supermarket.

This is how I serve it to make it delicious and nutritious.

Tortillas are my best friends, for real. They go perfectly with everything. salt or sweet. I added hummus, vegan cheese, tempeh, onion and seeds on my tortilla, serve with grilled potatoes with parsley, with more onion, tempeh and hummus on a side.

And lunch again

I had half of the tempeh left, I baked it on the pan first with olive oil and then added some mushroom cream that I make from a nutritional mix I use regularly.

I grilled onion, garlic, sweet potato and kale on olive oil.

I served it on a toasted piece of whole grain bread with hummus and vegan cheese.

I added 1 teaspoon of crushed seeds (chia, flax, sesame and sunflower seeds)

1 teaspoon of hemp seeds.

A bit of parsley and olive oil.

And that’s it!
